Where did Cashew come from?

The cashew tree is native to Brazil, where its fruit is a sought-after delicacy. In the 16th century, the Portuguese introduced them to India. What we call the cashew nut is actually the seed of this fruit.

Cashew Nut is cultivated mainly in coastal regions of Maharashtra, Kerala, Orissa, Goa, Andhra Pradesh, Karnataka & Tamil Nadu, with the #Konkan region producing the most premium quality nuts. But do you know the pain that goes behind this heavenly taste!?

Let us take you on a cashew trail… to see how it is produced and processed. The Cashew Nuts that we at Natural Mantra procure for you come from the Konkan region of the western coast of India.  Most units here produce the Cashew #Kernels and sell with its natural taste. However, some of the processors further process the Cashew Kernels to add flavors (salted, spicy, masala, honey, etc.) to it.

 #Processing of cashew nuts

This is a fascinating process! There are different stages in the processing of cashew nuts:

All raw nuts have foreign matter like sand, stones, dried apple, etc. which are sieved out before roasting.

The next stage is to soak the nuts in water to avoid scorching them while roasting. After being left to stand for about ten minutes, the water is drained off, and the nuts left for about four hours to allow the water on the surface to be absorbed. This process is repeated thrice till a moisture content of 9 per cent is reached.

The nuts are then heated to make them brittle enough to extract the kernels from the shells intact, by using the open pan, drum roasting and the hot oil method.

After manual or mechanical shelling, the kernels are separated, pre-graded, dried, graded and packed, after making sure that their moisture content rises to 5 %. This protects them from breaking during transport.
